Sunday Donuts
In my hometown of Marsala, special Sunday dishes take front-and-center. There is a special feeling of comfort and nostalgia when a traditional mid-day meal is served to the family. Whether that is pasta, fresh seafood salad, or a sweet bakery treat, nothing beats the homemade touch on a sleep, sunny afternoon. One of my favorites? Donuts made with potatoes for a happy Sunday!
What You Will Need
Ingredients:
4.5 oz golden potatoes
2-1/4 cups all-purpose flour
1/2 tbsp honey
1 tbsp Extra Virgin olive oil
1-1/8 tsp dried yeast
1 egg
pinch of salt
2 tbsp milk
Seed oil
Granulated sugar as a garnish
Equipment:
Mesh frying basket or large pot (5-6 qts)

Cooking Instructions
1. Place the potatoes in a large pot and cover thoroughly with water. Cook over high heat until rapidly boiling.
2. Drain the potatoes and allow them to cool.
3. Place them in a medium sized bowl. Add the milk to the bowl and mash slightly.
4. Combine the potato, flour, egg, milk, olive oil, yeast, honey and salt in a large mixing bowl. Using a dough hook, paddle, or similar attachment, mix the ingredients on medium until fully combined, with a moist consistency.
5. Coat your hands lightly with flour and remove the dough from the mixing bowl. Break up the dough into individual chunks and measure them on a scale. Adjust the amount up or down to reach approximately 50g for each.
6. Roll each section of dough into the shape of a stick, 1/2” thick, and then attach the ends so they form a donut shape.
7. Cover the rings with a towel and let rest for 30 minutes, allowing the dough to rise.
8. Heat a large amount of seed oil in the 5 qt. pot, filling at least 1/3rd full.
9. When the oil is very hot, use tongs to add a small batch of donuts to the pot. Let them fry for 2-3 minutes on each side, or until golden brown.
10. Place the fried donuts on a paper towel to soak up excess oil, and then very quickly dip them in a bowl of the granulated sugar to coat them. Be sure to do this while the donuts are still warm, so that the sugar coating will stick properly.
11. Serve immediately and enjoy!
